Introduction

read through the recipe prep the ingredients in 3 different bowls

serves 18 regular sized muffins
oven 350

spray or use baking cups muffin pan

Ingredients

    11/2 c carrots, shredded (2-3 medium size)
    1 c apples, shredded with peels on
    1/2 c coconut
    1/2 c raisins

    1/4 - 1/2 c chopped nuts of your choice (use for top of muffins)

    Note: can use dryed chopped fruits.

    mix together

    (1/4 c milk mix 1/4 c bran flakes let sit til bran flakes is moisted)
    add the below ingredients to the milk and bran flakes mix well
    2 eggs
    3/4 c veg oil (oil of your choice)
    1 TBSP vanilla ( flavoring of your choice adjust to your taste)

    11/4 c unbleached white flour
    1/4 c whole wheat flour
    1/4 c soy flour
    1 c brown sugar packed
    2 tsp baking soda
    1 TBSP ground cinnamon
    1/2 tsp salt

    blend the dry ingredients well

    in the dry ingredients bowl -blend in the milk mixture- blend well
    add the carrots mixture - blend well

    divide batter evenly in 18 muffin pans then sprinkle nuts on top


Directions

18 regular sized muffin

bake for 20-25 min, cool for 5 min. remove from pan
