Ingredients

    Plums, 1.5 pounds ( I used overripe Italian prunes which were easy to stone)
    *Canola Oil, 0.25 cup
    * Unsweetened Apple Sauce, 3 tbsp
    Almond Breeze Almond Milk, Unsweetened Original, 1/3 cup
    * Lime Juice, 1 tbsp
    *Splenda No Calorie Sweetener, 1/2 cup
    Vanilla Extract, 1 tsp
    *Arrowhead Mills oragnic oat flour 1 cup, 3 serving
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp
    Cinnamon, ground, 1 tsp
    Pecans, 0.5 cup, chopped

Directions

Preheat oven to 350. Grease a 9x5.5 inch loaf pan.

Place stoned plums in mixing bowl. Mash well. Add remaining wet ingredients and mix well.

In another bowl, combine dry ingredients and mix into wet mixture, beating well by hand or with mixer. Blend in pecans.
Pour into nonstick loaf pan and bake at 350ºF for approximately 1 hr, or until a toothpick comes out clean.

Allow to cool on a wire rack before unmolding.
