Ingredients

    2 onions finely chopped
    1/2 c chicken broth
    1 tbsp curry powder
    2 tbsp golden raisins
    2 tbsp apricot jam
    2 macintosh apples, cored and cut into chunks
    2 bananas, cut into 1/4" pieces
    1 tbsp lemon juice
    3/4 lb cooked shrimp
    2c cold cooked brown rice
    2 celery stalks chopped
    1 1/2 c plain skim yogurt
    3 tbsp reduced fat mayo
    1/2 tsp salt
    2 c lettuce

Directions

1. in small saucepan cook onions, broth and curry powder bringing just to a boil. reduce heat and simmer until onions are soft. stir in raisins and fruit. cool completely.
2. In medium bowl combine apples, bananas, and lemon juice. Stir in shrimp and rice. In another bowl mix broth mix, yogurt, mayo and salt. Pour over shrimp mixture and stir. Serve over rice.
