Ingredients



    * Cucumber (peeled), 4 medium
    * Red Ripe Tomatoes, 3 medium whole (2-3/5" dia)
    * Scallions, raw, 0.5 cup, chopped
    * *Fresh mint, chopped, 0.25 cup (or to taste)
    * Lemon juice, 4 fl oz (or to taste)

Directions

Peel the cucumbers, then dice them, the tomatoes, and the scallions (I use the whole scallion, including the white part; everything but the roots). Add the mint and the lemon juice, and toss. For best results, cover and refrigerate for a few hours before serving; I often make it the night before I plan to serve it.

    Incredible!
    Fabulous. Had some mint left over and wanted a salad for dinner. Added some Sumac from a Mediterranean grocery store. I've been looking for a recipe for that ingredient, too. I added 1 Tbsp. of Pomegranate juice to add to the dressing, too. Dinner will be Honey Lemon Chicken & roasted potatoes. Yum! - 8/22/15
