Introduction

it's like chicken salad, but with chickPEAS it's like chicken salad, but with chickPEAS
Number of Servings: 3

Ingredients

    - 1 can garbanzo beans (chickpeas)
    - 2.5 tbsp reduced fat mayo
    - 1/2 tsp. italian seasoning blend
    - 1/4 tsp. cumin
    - onions or celery (optional)
    - onion powder (a few shakes)
    - 1 tsp. dijon mustard

Directions

Mash chickpeas with fork, add everything else, and stir. makes about 3 servings.

    Very Good
    To make this vegan, I used veganaise instead of mayo. I used a little less of the veganaise, and added a small amount of pickle relish and left out the Italian seasoning and cumin. Wonderful! -- and a welcome change from humus! - 10/19/07
