Introduction

This is a great homemade pesto with less olive oil than much of the commercial stuff. I grow basil during the summer and this is an excellent way to use it up and make something fresh! Number of Servings: 24

Ingredients

    1/2 cup olive oil
    1/2 cup chopped walnuts
    2 cups firmly packed fresh basil leaves
    1/2 cup grated parmesan
    4 cloves of garlic, peeled and sliced
    1/2 teaspoon of salt
    crushed black pepper to taste

Directions

Makes 1.5 cups or a total of 24 tablespoon servings.

In food processor bowl, combine oil, nuts, basil, cheese, garlic, and salt. Cover and process or blend until nearly smooth. Add pepper to taste and stir in with a spoon. Store in the fridge for 1 week or freeze for up to 3 months.
