Introduction

Easy! The most work is chopping the vegetables.
I cook large amounts of beans and wild rice and keep them in 1 cup packages in the freezer to add to dishes. Lentils and rice could be subbed for the cooked kidney beans and wild rice.Adding cooked rice and beans early doesn't work so well.

Ingredients

    1 28 oz/794 gr can crushed tomatoes
    1 cup vegtable broth
    1 large yellow summer squash cut in 1" chunks
    2 small zuchinni squash cut in half inch "coins"
    1 large or 2 small red bell peppers cut in 1"chunks
    1 large or 2 small green bell peppers cut in 1" chunks
    6 cloves of garlic
    1 cup carrots cut in slices or strips
    Celery 5 large stalks cut in 1" chunks
    1 cup sliced mushrooms
    1 tsp Italian Seasoning
    2 TBSP Basil
    1/4 tsp black pepper
    NuSalt to taste

    2 cups kidney beans (cooked)
    2 cups cooked wild rice

Directions

Makes about 12 1 cup servings

In crockpot place all ingredients (except beans and rice)
Cook on high setting for 6 hours (low setting about 10 hours) In last half hour add the cooked beans and cooked wild rice, heat until warmed.

If desired top with grated parmesan cheese, but don't forget to add into your nutirition count

    What's the point of using a slow cooker if you can't cook the rice and beans in it also? - 8/17/10

    You can use lentils & rice if you want to cook all at once, dry beans don't get done as quickly as the vegies. cooked beans get mushy if added too early. I don't like mushy beans or mushy rice. just my personal preference. I keep both cooked wildrice and beans in the freezerto add 2 dishes
