Introduction

Cold salad that is refreshing and easy to make. I would add more salsa for flavoring but this is what I had. You could also add some romaine if you wanted but I wouldn't refrigerate it after. Ingredients

    1 Green Bell pepper, chopped
    1 Red onion, chopped
    3 cup Brown Rice
    1.5 cups beans (garbanzo, black, pinto mix or whatever)
    1 cup corn
    3/4 cup salsa

Directions

Combine all of the ingredients in a bowl, mix and enjoy!
