Introduction

I loved Mom's Macaroni Salad, and I used to make it often. This is the same recipe, without the mayonnaise! Not only is it lower in calories, it still tastes great, and I don't have to worry about it sitting out for a while. Is really cute decorated with little quail eggs and a sprinkling of paprika.
Makes 16 1/2-cup servings.

Ingredients

    2 c. macaroni (1/2 lb)
    3 eggs
    1 medium onion, chopped fine
    30 olives (1/2 c. chopped)
    1/2 c. olive juice
    1 green pepper, chopped
    2 celery stalks, chopped

Directions

1. Cook macaroni according to package directions.

2. Boil eggs and dice. You may want to save one egg to slice into wedges to decorate the top.

3. Drain macaroni, but DO NOT RINSE. Mix olive juice into hot macaroni. Add onion, olives, eggs, green pepper and celery and mix well. Salt and pepper to taste.

Note: Mom's recipe had 1 1/2 c. mayonnaise, 3 T. sugar, and 1 1/2 T. mustard. What were we thinking when we cooked like that?
