Introduction

My grandma used to make these. I think the original recipe may have come from a cereal box because it uses All-Bran and Grapenuts. I've substituted applesauce for half of the margarine, and whole grain flours for half the white flour. You can substitute more, if you want, but this makes it taste very much like the original. Ingredients

    2 cups 100% bran cereal (like All-Bran)
    2 cups boiling water
    1/2 cup margarine
    1/2 cup applesauce
    3 cups sugar
    4 eggs
    1 quart buttermilk (can use buttermilk mix)
    5 cups flour (I use 2 cups whole wheat flour, 2 cups white flour, and 1 cup rice or oat flour)
    5 teaspoons baking soda
    1 teaspoon salt
    4 cups grapenuts cereal

Directions

1. Pour the boiling water over the bran cereal and let sit.

2. Blend margarine, applesauce, and sugar together.

3. Add eggs and buttermilk and mix well.

4. Mix in flour, baking soda, and salt.

5. Stir in grapenuts and bran cereal/water mixture.

6. Let sit a few hours to a week in the refrigerator. (Also freezes well)

7.Pour into cupcake liners and bake at 400 for 15 minutes.

Makes 48 muffins.
