Introduction

Ingredients

    1 Zucchini, chopped
    1 Egglplant, peeled and cubed
    1 Onion (which ever kind you prefer white, red, etc) chopped
    1 lb of mushrooms, chopped
    1 cup of cherry tomatos
    1 sweet red pepper (bell pepper) chopped
    4 cloves of garlic, minced
    2 tbsp Olive Oil
    2 tsp Italian Seasoning

Directions

You will need a pretty big pan. In a pan, saute the 1 chopped red pepper, 1lb mushrooms, and 1 chopped onion in 2tbsp olive oil for about two minutes till they start to soften. It won't take very long. Now dump in everything else (eggplant, zucchini, garlic, seasoning, and tomatos) and continue sauteing for about 10 minutes.

You can eat by itself, as a side dish, or over pasta. Very tasty and easy :)
