Introduction

Ingredients

400g whole wheat macaroni (or plain)
50g dairy-free margarine (or butter)
2 Tbs plain flour (or whole wheat or rice flour)
2 cups soy milk
2 cups grated soy cheese (or cheese)
100g Frozen mixed vegetables (or other veg or not)
1 tsp garlic (or not, I like garlic)
Salt and pepper to taste
Directions
1a) Cook macaroni in boiling water to al dente and microwave frozen vegetables according to microwave instructions.
1B) Melt butter in saucepan then add flour. Stir while cooking for 1 minute on medium heat.
2B) SLOWLY add milk while stirring until smooth and all milk has been added. Stir until it just comes to a boil then reduce heat and simmer for 2 minutes.
3B) Remove from heat then add cheese and stir until smoothly melted.
4B) Add garlic then season to taste with salt and pepper.*
4a) Drain pasta and vegetables then pour cheese sauce over it in the pan and serve.
* You may skip garlic or season to taste with garlic, salt and pepper.
