Ingredients

    1 (16oz) package elbow macaroni
    1 lb ground turkey
    1 (16oz) jar salsa
    10 oz Velveeta, cubed
    1 (15oz) can chili-style beans

    1/2 C grated parmesan cheese

Directions

Cook macaroni according to pkg directions. Meanwhile, in a skillet, brown turkey. Drain macaroni, set aside.

In a microwave safe bowl, combine salsa & cheese. Microwave, uncovered, until cheese is melted. (2-3 min, stirring every minute)

Stir salsa/ cheese mix & macaroni into the turkey skillet and mix well.

Transfer into a large, greased casserole dish. Sprinkle parmesan over the top evenly. Bake uncovered @ 350f for about 30 min, until heated through.

    This was amazing!! So easy and yummy in our tummies !! We substituted with light velveeta. Used 93% lean ground turkey. The fresh parmesan cheese and cilantro on top really made this dish!!! Make it, your family will LOVE it!! - 9/6/10
