Good fiber/low carb/low glycemic bread for diabetics. A nice flavor, and the texture is moist and very dense, almost like a pudding bread. Add nuts, raisins, apples or even pineapple as an option. Ingredients

    1/2 c whole wheat flour
    1/3 c oat flour
    10 tblspn Organic Coconut Flour
    4 tblspn flax meal
    1/4 c Arrowroot flour
    1/8 tsp baking powder
    1/2 tsp baking soda
    1 tsp cinnamon
    2 eggs
    1/4 c canola oil
    1 Tblspn chia seed
    3/4 c water
    1/4 c Agave Syrup
    4 tsp Splenda
    1 tsp vanilla
    2 cup grated zucchini
    1/4 c Motts for tots apple juice

Directions

Grate zucchini enough for 2 cups
mix all dry ingredients together
mix the remaining ingredients together
add mixtures together
place in 1 greased and floured bread pan or muffin tin
bake 45 -60min in 350 oven
