Ingredients

    2 cooked Pork chops - sliced thinly
    1 block of Tofu - rinsed, dried and sliced
    1 small onion - sliced
    1 cup of snow peas - rinsed
    1/2 cup of sprouts - rinsed
    1 tsp of ginger root - finely minced
    1 clove of garlic - finely minced
    1 tbsp olive oil
    1 10 oz bag of stirfry veggies
    1.5 cup Quinoa
    3 cups of water
    1/2 cube of chicken bullion

Directions

Heat oil in wok or pan over med heat. Add tofu and garlic, cook till garlic is fragrant. Add pork, ginger and onion, cook till onion is translucent, stir and reduce heat if necessary to avoid overcooking ginger. Add the rest of the veggies and cook till tender. Season with pepper or chili flakes. While the veggies are cooking
Bring water and the half bullion cube to boil, add quinoa and reduce heat to low. Continue to cook for 10 minutes till quinoa is fully cooked.
Serve stirfry over quinoa.
