Ingredients

    1 envelope of lipton onion soup mix (dry)
    8 saltine crackers crushed fine
    1/4 or 4 tsp of grated parmesan cheese
    1 egg
    2 tbs. margarine or butter
    6 or about 1 1/4 lb. skinless boneless chicken breast

Directions

Preheat oven to 350 degrees

In small bowl melt margarine or butter in microwave a few seconds

In another bowl combine, onion soup mix, crackers crushed, and parmesan cheese, mix well

In another bowl beat egg for dipping batter

Grease or lightly spray 9x9 baking dish

In a qt. kettle boil the chicken about 15 minutes, remove and immediately dip in bowl with egg, then into breading mix in other bowl
then place chicken pieces in baking dish

After all chicken is battered then lightly drizzle the melted butter or margarine over all the chicken breast pieces

Place in oven uncovered and bake 20-45 minutes

Makes 6 (3-4 oz) servings
