Ingredients

    2 lbs medium shrimp, peeled and deveined
    2 large eggs
    2/3 cup panko breadcrumbs
    4 scallions, thinly sliced
    2 Tbls lemon juice
    1 tsp sea salt
    1/2 tsp freshly ground pepper
    1/2 tsp garlic powder
    1/2 cup coconut oil for frying
    12 slices of Eziekiel bread
    Tomato, 6 slices
    Lettuce, 6 leaves
    Avacado, 6 Tbls
    1 cup Mayo
    2 Tbls Old Bay Seasoning (optional) adds sodium not listed!

Directions

Makes 6 Burgers.... Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with egg, bread crumbs, scallions, lemon juice, salt, pepper, and garlic powder, and mix. Refridgerate 10 minutes, and then form into 6 patties.
Heat coconut oil in a large skillet over medium high heat. Cook burgers about 3 minutes per side.
For the mayo, combine mayo and 2 Tbls old bay seasoning.
Spread the bread with mayo and top burger with tomato, avocado, and lettuce.
