Ingredients

    Mussels (about 20 live mussels)
    1/8 c. Dry Sherry or cooking wine
    Garlic, 3 cloves, crushed
    Leek, entire white bottom section, sliced
    1/8 c. water

Directions

Makes 1 serving.

Slice the bottom section of a medium sized leek (use only the white part, not the green).

Rinse the mussels and set aside.

Pour sherry and water in a pot. Add leek slices and crushed garlic. Heat on HIGH heat for 30 seconds. Add mussels. Stir well to combine. Cover and cook 5-10 minutes or until all the mussels are wide open and the meat is falling out of the shells.

Note, do not force open any shells that don't open. Throw them away.
