I enjoyed tuna melts in the past, using the laughing cow cheese eliminates the need for cheese as well as mayonnaise. Ingredients

1 can (5oz) tuna in water
2 wedges (any flavor if you prefer another) Laughing Cow spreadable cheese
8 Saltine Crackers
Directions
Mix the tuna and cheese together well using a fork to break the cheese up more evenly. If you wish, season as you like. Top saltine crackers with the tuna salad and enjoy!
*Can use lettuce leaf to lower carbs/calories in place of saltines.
