I enjoyed tuna melts in the past, using the laughing cow cheese eliminates the need for cheese as well as mayonnaise. You can enjoy on the saltines or if you want less carbs and calories, eat on a lettuce leaf. Ingredients

    1 can (5oz) tuna in water
    2 wedges (any flavor if you prefer another) Laughing Cow spreadable cheese
    8 Saltine Crackers


Directions

Mix the tuna and cheese together well using a fork to break the cheese up more evenly. If you wish, season as you like. Top saltine crackers with the tuna salad and enjoy!

*Can use lettuce leaf to lower carbs/calories in place of saltines.

Makes 2 smaller servings or 1 large serving.
