Introduction

Ingredients

2 lb shredded cole slaw mix
8 scallions, chopped
Dressing:
1/3 C olive oil
1 C red wine vinegar
1/2 C sugar
2 flavor packets from Ramen noodles (chicken or oriental flavor work best)
Chinese Cole Slaw Topping:
2 pkg Ramen noodles, dry
1 C sunflower seeds
1 C slivered almonds
Directions
Prepare dressing ahead of time and allow to cool.
To make dressing:
Combine oil, vinegar, sugar and flavor packets from noodles in a small saucepan. Cook over medium heat until sugar and flavoring are dissolved. Refrigerate.
Chinese Cole Slaw Topping:
Crumble dry Ramen noodles. Combine and spread along with almonds and sunflower kernels on a large baking sheet. Bake at 325 degrees for 10 minutes, until almonds begin to brown. Store in an airtight container.
Toss the cole slaw mix and onions with the dressing. If you have a large group, you may combine Chinese Cole Slaw Topping with salad just before serving. Otherwise, reserve the topping and to individual servings.
Serving = approximately 2 oz cole slaw with 1/2 oz topping
