Ingredients

    Cake

    2 cups Flour
    1 cup Sugar
    1 1/4 tsp Pumpkin Pie Spice
    1/3 cup Butter
    1/2 cup Brown Sugar
    2 Eggs
    15 oz Pumpkin Pie Filling
    2 Egg Whites
    1 cup shredded Carrotts

    Filling
    4 oz Fat Fee Cream Cheese
    1/4 cup Sugar
    1 tbs Skim Milk

Directions

Preheat Oven to 350, spray 9" x 13" pan with cooking spray

Beat sugar, brown sugar and butter together, add eggs, and egg whites, pumpkin pie filling and carrots, beat until well mixed, add flour and beat until well mixed. Pour into greased pan.

Prepare Cream Cheese Filling

Mix creeam cheese, sugar and milk until well blended.
Drop spoonfulls of mixture over cake batter and swirl in with a butter knife.

Bake for 25-30 minutes. Cool completely and cut into 24 squares.

    made this for my son's kindergarten halloween party and the container came back empty. I didn't put the cream cheese icing on for this batch for children with lactose problems. Will definitely make it again. - 11/8/10
