Ingredients

    1 package Shirataki noodles (2 servings)
    1 Tbsp Cider Vinegar
    0.5 cup Onions, chopped
    0.5 Red Pepper (about 3.5 ozs), thin slices
    2 cloves Garlic, chopped
    0.25 cups white wine
    2 cups Cut Leaf Spinach - Frozen
    0.5 medium Tomato - chopped
    0.25 oz chopped Kalamata Olives
    3 ozs Smoked oysters (1 can), Rinsed
    0.5 oz Parmesan Cheese, grated

Directions

1. Rinse Shiratake noodles thoroughly and set aside. (parboil for 3 minutes if desired)
2. Heat non-stick pan over medium heat.
3. Saute onion and pepper in cider vinegar for a minute, then add garlic.
4.Cook until onions are translucent, then add wine and allow to reduce until almost completely evaporated.
5.Add Spinach (no need to defrost) and tomatoes. Cook until water released from spinach and tomato have almost evaporated.
Add noodles, oysters and olives and heat through. Remove pan from heat and stir in Parmesean cheese.

Serves 2.
