Introduction

I just mixed several different recipes and came up with this medley. It's a great tasting way to get fresh vegetables! I just mixed several different recipes and came up with this medley. It's a great tasting way to get fresh vegetables!

Ingredients

    1 cup yellow and green squash
    1 Vine ripe fresh tomaote
    1/2 cup Vidalia onion
    Garlic salt or fresh garlic
    Lemon Pepper seasonings
    1 tbsp Extra virgin olive oil
    1 tsp Land of Lakes light butter spread

Directions

Place 1 tbsp of extra virgin olive oil in skillet and heat. Chopped or slice onion as you like it and place in skillet. Cook for about 3 minutes till slightly tender. Add chopped squash and cubed tomatoe. Sprinkle with lemon pepper seasoning, garlic and top with 1 tsp Land o Lakes light butter spread for added flavor.

Adjust recipe to the number of people. I use 1/2 cup of two different squash, 1/2 cup onion and 1 small tomatoe and it makes 3 servings as a side dish. I love this for lunch with egg salad or tuna salad. Would also be good rolled in a pita with ham or turkey for a great wrap!
Cover and let steam on low heat for bout 10 minutes. May add about 1/4 cup water to create more steam if tomatoe does not add enough juice.

I sprinkle with an added dash of the lemon seasoning as I put on the table and everyone really goes for this! Great flavor.
