Ingredients

    1 Pkg Hillshire Farms Turkey Smoked Sausage, sliced
    1/2 Onion, Chopped
    2 Cloves Garlic, Minced
    1 Carrot, Chopped
    1 Zucchini, Chopped
    1 Can Diced Tomatoes, Drained
    Juice of 1/2 Lemon
    1 Box Barilla Plus Rotini
    1 Cup 2% Shredded Cheddar Cheese

Directions

Cook Rotini according to package directions.
Spray a large skillet with cooking spray. Brown Sausage in the pan with the onion and garlic for 5 minutes. Add carrot and saute another 5 minutes. Add Zucchini and saute another 3 minutes. Add drained tomatoes, and season to taste. Let simmer 5-10 minutes until carrots are crisp-tender. Remove from heat, add lemon juice and stir to combine. Toss with cooked noodles and top with shredded cheese. Makes 6 1/2-2 cup servings.
