Ingredients

1 cup whole wheat flour, 1/2 cup all purpose flour, 1 tsp baking soda, 2 tsp baking powder, 1/4 tsp salt
1/2 cup brown sugar or organic cane sugar (I do 1/4 cup of each)
1 cup pumpkin puree
1/3 cup unsweetened applesauce
3/4 cup low fat vanilla yogurt ( I use Stonyfield)
1 tsp vanilla
1/2-3/4 cup mini chocolate chips (optional-gets my kids to eat them!)
Directions
Preheat oven to 400 and prepare pans with cooking spray or muffin liners. Mix egg and sugar until smooth. Add pumpkin, yogurt, applesauce and vanilla. In another bowl combine flours, powder, soda and salt. Mix dry and wet ingredients together until just combined. Do not over mix. Use ice cream scoop to evenly distribute batter into muffin pans. Bake for approx. 18 mins. Muffins will feel a little mushy to the touch. Let them cool thoroughly before eating.
