Ingredients

    1/4 lb. whole wheat rotini
    1/4 lb. mozzarella cheese, part-skim
    3 c. broccoli, chunks
    3 tomatoes cut in wedges
    1/3 c. parsley, chopped
    1 c. chopped green onions

    Dressing:
    3 tbsp. lemon juice
    3 tbsp. water
    2 cloves garlic, minced
    1/4 c. olive oil
    1 tsp. Dijon mustard

Directions

Boil water, put pasta in bottom of double boiler. Cut up broccoli and steam in the top part of the double boiler. Cut up tomatoes. Chop green onions, cut up cheese, chop parsley. Add tomatoes, green onions, cheese, and parsley to a large bowl.

Once broccoli and pasta are cooked put in a bowl to cool in freezer. Make dressing: combine lemon juice, water, garlic, olive oil, and Dijon.

Once everything is cool combine and let sit in fridge 30 min. to 4 hours. Serve.
