Introduction

Ingredients

1 apple
1 banana
1/3 cup egg substitute
1.5 cups plain low fat yogurt
1/2 cup molasses
1/4 cup applesauce
3 cups natural bran
1.5 cups whole wheat flour
1/3 cup honey
1 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 cup blueberries (or other berries)
Directions
Preheat oven to 375f. Line muffin tins with paper liners. Grate or finely chop apple, you should have about 1 cup. Mash banana.
In a medium bowl, beat eggs. Stir in yogurt, molasses, applesauce, honey and chopped apple and mashed banana.
Measure bran, flour, baking powder, baking soda, and cinnamon into a large bowl. Stir, then pour in fruit mixture, stirring just until combined. Stir in berries. Spoon batter into muffin tins ( I use a 1/4 cup measure )
Bake at 375f for approximately 30 mins. Remove from oven and let cool.
