Introduction
This recipe was just based on the amount of apples I had in the fridge, it makes about a cup in vol, or 8oz of pretty tasty apple sauce (tangy and not too sweet) I would suggest at least doubling the recipe if you actually use it frequently. Ingredients

3 med cooking apples,
wedge of lemon
1 or 2 tsps ground cinnamon
50g sugar
tap water(enough to cover ingredients)
Directions
Peel, core and dice the apples
Put in a saucepan
Squeeze the lemon over apple chunks and leave the lemon wedge in the pan.
Add enough cold water to just about cover the chunks
Put on a medium heat with a lid on for 15-20 mins
Then mash the apple in the pan and stir in sugar and cinnamon.
Put the lid back on for just a few mins.
finally remove the lemon wedge(careful it's really hot!)
and if you want a really smooth sauce push it through a sieve before putting in a jar.
(TIP: leaving the lemon in while cooking not only gives it a good tang but since most of the pectin in a lemon is in the peel it will help preserve the sauce too)
