A great weekend or holiday meal, breakfast, lunch, or dinner! A great weekend or holiday meal, breakfast, lunch, or dinner!
Number of Servings: 2


    2 large eggs
    3/4 cup egg whites
    1/4 cup of chopped steamed cauliflower and broccoli mixed
    4 thin slices of tomato
    1/8 cup cheddar cheese, may use low fat
    Fresh or Dried Parsley, Chives, and Dill to taste
    Salt and Pepper to taste
    Avacado sliced on top for a garnish


Spray 8 inch skillet with canola oil cooking spray. Let heat over medium heat for 1-2 minutes. Pour egg mixture into pan, start adding broccoli, cauliflower, and cheese, cover and cook for 1-2 minutes. Add sliced tomato evenly to top of mixture, sprinklle herbs on top, cover and let cook another 1-2 minutes. Flip like a pancake, cover and cook another 1-2 minutes or to desired doneness. seve hot with sliced avacado on top.
