Introduction

My SIL Jane shared this recipe with me and its the best sauce I have ever had. Made from garden fresh Roma Plum tomatoes that are simmered for three hours to make it just right for my taste buds. Ingredients

    19 cups of fresh garden tomatoes, chopped
    1 cup olive oil
    1 1/4 tsp black pepper
    8 cloves garlic, minced or 4 Tbsp of minced garlic from a jar
    3 bay leaves
    4 tsp salt
    2 tsp oregano
    2 tsp basil
    2 large cans Contradina Tomato paste, 12 oz cans
    1 cup brown sugar, packed

Directions

In large Dutch oven sautee garlic in oil then add chopped tomatoes and seasonings. Let simmer on low heat (between 2-3 on stove with lid on pan for 2 hours, stirring occasionally.
Next add the tomato paste and brown sugar and let simmer
another hour. Stir more often so sugar will not stick to bottom of pan and burn sauce.
Lastly strain your sauce in a Chinois to seive the seeds and skins from the sauce. Pour 2 cups of sauce into either quart freezer bags or ziploc containers.
Makes 15 1-cup servings or 5 ( 24 oz) containers to freeze
1 container will make 9 (1/3) servings.
