Ingredients

2 lbs EZ peel shrimp, peeled
1/4 cup honey
1.5 tbsp ground ginger
3 tsp chili garlic sauce
1/4 cup lite soy sauce, divided
2 eggs
1 tbsp coconut oil
2 cups frozen pepper and onion mix
1 cup frozen peas, thawed
2 boil-in bags brown rice, cooked and drained (about 4 cups)
1 tsp sesame oil
Directions
Cook brown rice according to directions, drain, and set aside.
Spray a large skillet with nonstick spray and heat over med-high heat. Add shrimp, honey, 1/8 cup soy sauce, chili garlic sauce, ginger, and honey. Stir and cook until shrimp is almost cooked through. (3-5 minutes). Set aside.
Spray wok or large skillet with cooking spray and heat over med-high heat 2 minutes, or until very hot. Add eggs and cook 1 minute on each side. Remove, chop, and set aside.
Heat coconut oil in wok, then add onion and pepper mix and shrimp. Stir-fry 5 minutes. Add peas, rice, and remaining soy sauce. Stir-fry 3-4 minutes, until heated through. Stir in eggs. Sprinkle sesame oil on top for authentic flavor. (Can also top with green onions if you like)
Makes 8 servings (1 cup each)
