Introduction
This is my delicious healthy take on classic meatloaf. Using lean ground turkey and sweet & sour sauce really makes it moist and yummy! Also, I use sweet (preferrably Vidalia) onion when I can. My family LOVES this recipe, and we sometimes do a twist and make Meatballs instead of the loaf. This is my delicious healthy take on classic meatloaf. Ingredients
-
1 pkg (20oz) Jennie-O Extra Lean Ground Turkey (93/7)
6 T Sweet & Sour Sauce (divided)
1 Large Egg
1/4 c chopped sweet onion
1 tsp minced garlic
1/2 c dry bread crumbs (plain)
salt & pepper to taste
Directions
Preheat oven to 375. Mix all ingredients (only 3 T of the sweet & sour sauce) in large bowl. Once mixed, transfer to sprayed, non-stick 8x8 pan. Press mixture flat into corners to cover pan (you could also use a loaf pan if you prefer). Top with remaining sweet & sour sauce.
Place in oven and cook for 35-40 mins. or until it starts to pull away from the pan. ENJOY!
NOTE 1: If you prefer to make meatballs, divide mixture into 6 equal portions and roll into a ball. (You may want to use additional bread crumbs to help hold them together). Place each meatball in skillet sprayed with no-stick spray over medium-high heat, just long enough to sear. Turn once during this process so they have a nice brown on each side. Then transfer to sprayed casserole dish and cook as noted above.
NOTE 2: In an 8x8 square pan, the meatloaf will make 6 servings.
