Ingredients

    3/4 c Almond meal
    1/4 tsp Salt
    1/3 c Sugar
    1/4 tsp Baking soda
    1/2 tsp Cinnamon
    1 Egg + 1 Egg white
    1 tbl Butter
    1 c Carrots (grated)
    1 tsp Vanilla extract
    2 tbl Almond milk (+/-)

Directions

Combine dry ingredients.

Combine wet ingredients.

Mix wet and dry.

Pour into greased muffin tins (mini).

Bake at 350 for about 20 minutes.

Cool on racks.
