Introduction

Number of Servings: 8

Ingredients

    I small can of black beans

    I small can of mushroom pieces

    1 small can of sweet corn

    1 large can of chunky tomatoes

    1 large Onion

    2 tbsp Olive Oil

    1 tsp salt (to taste)

    1 tsp pepper (to taste)

    1 large bay leaf or 1 tsp bay leaf flakes

    1 tblsp garlic paste

    1 tsp Lea & Perrins Sauce

    1 tsp tabasco sauce (optional) more if you like it hotter.


Directions

Chop up your Onion and throw into a Large Stewing Pot with the Olive Oil, cook until onions are done, throw everything else in and cook on high for 3 mins. stir, turn heat down and cover continuing to cook on low heat until all juices are evaporated, keep stirring occasionally .

Can be served on a bed of Rice or Spaghetti or on Toast!
