Introduction

Ingredients

    Dry ingredients
    2 cups white whole wheat flour
    2 tsp baking powder
    1 tsp baking soda (bicarbonate of soda)
    1/2 tsp salt
    1 tsp cinnamon

    Wet ingredients
    1/4 cup canola oil
    1/4 cup to 1/2 cup sugar
    1 large fresh egg
    1 cup lowfat plain yogurt
    1 tbsp vanilla extract
    2 tbsp ground flax seed meal

    1 to 2 cups frozen mixed berries (calculated at 2 cups, eyeball amount when mixing) (I use Rader Farms Mixed Berries, from Costco)



Directions

preheat oven to 375 degrees. prepare (using baking spray) muffin baking trays.

mix dry ingredients together. set aside. mix wet ingredients completely. add wet to dry, stir until just mixed. add berries. Scoop into prepared baking trays.

bake 20-25 minutes. check tops for doneness. cool.

makes 18 standard size muffins - use one 12 cup tray, 1 six cup tray. servings calculated per single muffin.
