Ingredients

    * Water, tap, 1500 mL
    * Onions, raw, 3 large
    * Olive Oil, 1 tbsp
    * Carrots, raw, 1 small (5-1/2" long)
    * *Potato, raw, 1 small (1-3/4" to 2-1/2" dia.)
    * Parsley, 10 sprigs
    * *Peppers, sweet, red, fresh, 1 tbsp
    * Salt, 1 tbsp
    * Pepper, black, 1 tsp
    * Tofu, firm, 100 grams

Directions

Put 2 cups of the water in a bowl, add the potato and the carrot and let boil. When soft, just use a hand blender and mix it until creamy.

In the mean time, finely chop the onions and the red pepper and stir fry them in the olive oil until the onion becomes golden and transparent. Pour it into the boiling cream of carrot and potato, add the rest of the water, the finely chopped parsley, the salt, the pepper and the diced tofu and bring to a boil again.

Serve hot, with croutons. That's it!
