Introduction

Ingredients

    3 cups frozen vegetables (nutrition calculated with frozen gumbo mix)
    1 carrot, chopped
    1/4 cup lentils
    1 1/2 cup water
    18 oz spicy vegetable or tomato juice
    1 package of ground turkey
    1 Tbs turmeric powder
    1 tsp cumin powder
    1 tsp garlic salt
    1/4 cup half and half

Directions

Makes 4 2-cup servings.
Cook ground turkey until browned.
Add tomato juice and water and bring to a low boil.
Add lentils, frozen vegetables, chopped carrot and spices.
Let cook until vegetables are soft and add half and half.

For a vegetarian option, replace turkey with 1/2 cup of lentils or orzo. Half and half may be omitted.
