Ingredients

    Pine Nuts, .25 cup
    Olive Oil, 1 1tsp
    Chicken Breast, 16oz ( no bone or skin)
    Garlic, 2 cloves
    PC Extra Chunky Salsa - Mild, 3/4 cup
    Water, tap, .25 cup
    Cranberries, dried, sweetened (craisins), 0.25 cup
    Honey, 1 tbsp
    1 1/2 tsp. Cumin Powder,
    Cinnamon, ground, 1 tsp

Directions

Toast pine nuts in dry frypan until golden. Set aside. In same pan heat oil and brown chicken. Add minced garlic. Mix together salsa, water, honey,craisins and spices and then add into pan. reduce to a simmer for 20-30 minutes. Sprinkle with reserved pine nuts to serve.
I cut chicken into smaller pieces to cook faster.
serve with rice or couscous.
