This is simple to make and is a favorite everywhere I take it. Select mild or hot rotel (canned tomatoes and green chilis) and chili beans to determine the spiciness of it. Ingredients

    1 medium (2-1/2" dia) Onions, raw
    1 Bell Pepper
    1 tbsp minced garlic
    2 cans Kidney beans dark red and/or light red
    2 cans Brooks Chili Beans
    2 cans Diced Tomatoes & Green Chilies (RoTel)
    16 oz Beef, 90% Lean Ground Beef from Sirloin
    1 Tbsp chili powder
    1 tsp cumin

Tips

If you can't find Rotel, a mixture of diced tomatoes and a can of green chilis or jalepenos will do.


Directions

Brown ground beef with half of the 1 tbsp of the garlic.
While beef is browning cut the onion and bell pepper in chunks and put in the blender with both cans of rotel and remaining garlic. Blend until completely smooth and add to slow cooker with beans.
Combine beef with rest of ingredients in a slow cooker and stir together. Cook on low for 8 to 10 hours or over night. The longer it cooks, the better it tastes.

Serve with corn chips or corn bread and cheese if desired.
