I found this recipe in a Light and Tasty taste of home annual recipes. I made it with some changes and my family thinks it is better than tacos!

* If you want it lower calorie leave off the avacado.

Ingredients

    1 1/2 Pounds Lean Ground Turkey
    1/2 cup Onion chopped
    1 Cup Green Pepper chopped
    2 Garlic Cloves minced
    1 cup sliced mushrooms
    1 can (16 oz) Reduced sodium Kidney Beans rinsed and
    drained
    1 cup Salsa
    1 can (4 oz) chopped green chilies
    1 teaspoon chili powder
    1/2 teaspoon cumin
    1 1/2 cup (6 oz) reduced fat mexican cheese
    1/2 cup frozen corn
    16 corn tostadas (5 inches)
    2 cups shredded lettuce
    2 cups chopped tomatos
    1 avacado chopped
    1/4 cup minced cilantro

Directions

In an large skillet , cook ground turkey over medium heat until no longer pink; drain. Add the onion, green pepper and garlic. cook and stir for three minutes or until onion is tender. Stir in mushrooms; cook 1 minute longer. Stir in the beans,salsa,chilies, chili powder, and cumin. Cook for 5 minutes or until heated through. Stir in cheese and corn; heat through. Spread about 1/3 cup filling on each tostada shell. Sprinkle with lettuce,tomato,cilantro and avacado.

Too lower calories leave out the avacado.
