Ingredients

    *Mandarian Oranges (Sugar Free), 1 cup
    Almonds, 1/4 cup, sliced
    *Arthur Whole Wheat All Purpose Flour, 1.5 cup
    Baking Soda, 1 tsp
    Salt, 1/4 tsp
    Vanilla Extract, 1/4 tsp
    *Soy Milk Plain Light, 1 cup
    *Sugar In The Raw, 1/2 cup plus 2 tbsp

Directions

Preheat oven to 375. Combine all dry ingredients in a medium mixing bowl until well mixed. Add the soy milk, vanilla extract, oranges and almonds and mix gently so as not to tear up the oranges too much, as they are very delicate. Fill each cup of a muffin pan (I use one that makes 12) almost to the top and bake for 15 minutes. Let cool, remove from pan and serve.
