Sweet, as good as dessert! Sweet, as good as dessert!
Number of Servings: 4


    Acorn squash, approximately 4" diameter
    Brown sugar, 1 tbsp
    Lemon juice, 2 tsp
    Butter, 1 tbsp


Pierce skin of squash four times. Microwave whole squash 8-10 min until soft to touch. Cut in half, remove seeds. Season or fill with desired filling. Cook covered 5-6 minutes more.
Cut away and discard skin of squash. Mash the contents. Serves four.

    Thanks for posting this, I had no idea I could microwave it. I used a golden acorn squash and just put a pat of butter and a little sea salt. It was good. - 9/19/09

  • My Trader Joe's this week was doing something very similar, without lemon juice & with their own 21-seasoning. I made at home without seasoning or lemon juice, and it was terrific & easy. Will try with lemon juice next time! - 10/2/08
