Number of Servings: 4

Ingredients

    Acorn squash, approximately 4" diameter
    Brown sugar, 1 tbsp
    Lemon juice, 2 tsp
    Butter, 1 tbsp

Directions

Pierce skin of squash four times. Microwave whole squash 8-10 min until soft to touch. Cut in half, remove seeds. Season or fill with desired filling. Cook covered 5-6 minutes more.
Cut away and discard skin of squash. Mash the contents. Serves four.

    Thanks for posting this, I had no idea I could microwave it. I used a golden acorn squash and just put a pat of butter and a little sea salt. It was good. - 9/19/09

    Very Good
    Pretty good. It would probably have been better if I'd used the brown sugar instead of Splenda, but I'm cooking for a diabetic. I did add cayenne pepper which gave it a nice zing. - 2/4/18
