Ingredients

1 cup quinoa
1 head cauliflower
1/2 cup egg whites
3/4 cup breadcrumbs
3/4 cup oil
4 oz shredded smoked gouda
your preferred herbs, to taste (I use savory, basil, whatever's on hand)
1 tbs breadcrumbs
Directions
Preheat oven to 350.
Cook quinoa according to package directions
cut cauliflower into large-ish but bite-sized pieces & blanche, cool.
pour in oil a couple tablespoons at a time & heat to medium
dip cauliflower into egg and then breadcrumbs & fry, turning regularly, until brown all over. Continue with all cauliflower, adding more oil as necessary.
Place fried cauliflower in a single layer in a 9x13 baking dish. Season as desired. Spoon quinoa into spaces between, cover with shredded cheese & breadcrumbs. Bake until brown & bubbly.
Serves 8.
