Introduction

Altered from my mother-in-law's bran muffin recipe. This batter can be made ahead of time & refrigerated for up to 2 weeks. Original recipe calls for oil, 2 c white flour, & 1 tsp salt. Ingredients

    3/4 c applesauce, unsweetened
    1 c brown sugar, packed
    2 eggs

    2 c milk
    2 c bran
    1 c white flour
    1 c whole wheat flour
    1 tsp salt
    2 tsp baking powder
    2 tsp baking soda

    1 c raisins - optional

Directions

Beat applesauce, brown sugar, and eggs until creamy. Add remaining ingredients and stir well to combine, making sure there are no large lumps.

**Do not stir again**

Cover the bowl and refrigerate for up to 2 weeks.

To bake: Grease muffin tins and preheat oven to 400.* Fill muffin tins 3/4 full and bake for 15-18 min.

Makes 18 muffins.
