Number of Servings: 16

Ingredients

    2 Corn ears
    2 cups Chopped Tomato
    0.5 cup red onion
    1 tbsp lime juice
    1 avocado chopped
    2 tsp olive oil
1 jalapeno pepper seeded and diced
    2 cloves garlic
    Cilantro to taste
    Salt and Pepper to taste
Low cal, low fat hot sauce (optional)

Directions

1. Wrap the corn ears in tin foil and place them on the BBQ on high heat for 15 minutes turning occasionally.
2. While the corn is on the barbeque, combine all other ingredients in a bowl. Season with cilantro, salt and pepper to taste.
3. Take corn off the BBQ and cool. Remove corn from cob. Combine into bowl and let sit in refrigerator for at least 30 minutes.

I also put a very Hot Mango-Pineapple hot sauce that I buy from the market. It gives the salsa a great flavour.
