Ingredients

Sun Dried Tomatoes, 3 piece
Mushrooms, fresh, 2 cup, pieces or slices
Chicken Breast, no skin, 1 breast, bone and skin removed, cut into crosswise strips.
Oregano, ground, 1 tsp
Garlic powder, .5 tsp
Olive Oil, 1 tbs,
Flour, whole grain, .8 cup
Spinach, fresh, 1 cup
*365 Organic Whole Wheat Penne Pasta, 4 cups cooked.
1 can 14 oz. Swanson 99% fat free Chicken broth.
Directions
Place broth in tomatoes in microwave safe bowl.Microwave HIGH 2 min.Let stand 5 min. Remove tomatoes and cut up.
Season chicken with oregano and garlic. Heat oil in a large skillet.add chicken and cook until browned.
Add Mushrooms and cook until tender.
Stir in flour and cook and stir 1 min.
Add tomatoes and broth. Cook and stir until mixture boils and thickens.
Add Spinach and Pasta.
Mix to lightly coat.
Serve with grated Parmesan Cheese if desired.
Serves 4.
