Introduction

I made this with whole milk (on hand for my kids) since my skim milk had soured. Adds only a small amount of fat, since only 1/2 cup is used in the entire recipe. What a great way to get some veggies into my kids...they loved it! (I serve up 1/2 for me and then split the other half between their two sippy cups, and cut the thickness with additional milk for them) I made this with whole milk (on hand for my kids) since my skim milk had soured. Ingredients

    1/2 cup canned pumpkin
    1 5.3 oz container Greek Yogurt, honey flavor
    1/2 cup plain non-fat yogurt
    1/2 cup sliced zucchini
    1/2 cup whole milk
    1/4 cup cold water
    cinnamon, nutmeg, ginger and vanilla to taste
    2 TBS brown sugar
    6 ice cubes

Directions

Mix all ingredients in a blender and serve. Serves 2.

    This sounds really good. I will use almond milk, and I think I'll chuck up some zucchini and freeze it before I try this recipe. Sounds great though!! - 9/13/10
