Ingredients

    2 Medium Tomatoes cut into wedges, diced or sliced--your choice/preference
    2 English Cucumbers, peeled or not, cut lengthwise then into thin slices
    2 Medium Onions, sliced in 1/4" slices and rings separated
    2 TBSP Red Wine Vinegar
    1/4 cup Olive Oil
    2 TBSP Splenda
    1 TSP Salt
    1/2 TSP Black Pepper
    1 TBSP chopped fresh Parsley

Directions

Set aside your cut up tomatoes, cucumbers & onions. In your bowl (glass or plastic) pour in the remaining ingredients and mix or shake. Throw in the tomatoes, cucumbers, and onions into the mixture and toss around until mixed well. Marinate 2 hrs before serving.
