    3 baby zucchini, sliced
    1 tsp olive oil
    1 dash of salt
    2-3 dashes of black pepper
    1 tsp garlic powder
    2 TBSP parmesan, shredded


Preheat pan to medium heat. Coat bottom of pan in olive oil.

Add zucchini, salt, pepper, garlic powder, and stir to coat evenly in spices.

Cook for about 8-10 minutes or until tender, stirring occassionally. Add parmesan before serving.

To grill: put zucchini in bowl or zip top bag with olive oil and spices. Coat well. Grill for 4-5 minute or until tender. Add parmesan before serving.

    We added some italian seasoning and tossed these on the grill. Fantastic! Great with a dash of lemon juice as well. What a easy way to use up a bumper crop of zucchini. - 5/18/09
