Ingredients

8 oz portabella mushrooms (baby bella or caps, stems removed)
1 large onion, cut into strips
2 medium green bell peppers, cored, seeded and cut into strips
1 large red bell pepper, cored, seeded, and cut into strips
1/4 cup balsamic vinegar
2 T extra virgin olive oil
2 T minced garlic
1/4 tsp dried thyme
1/4 tsp freshly ground black pepper
1/2 tsp cumin powder
1/4 cup water (optional, see note in instructions) **
Directions
In a small mixing bowl, combine water, oil, balsamic vinegar, thyme, pepper, garlic, and cumin. Mix well.
Heat skillet over medium-high heat. Add oil mixture and cook for about 1 minute. Add all vegetables and cook till soft or at desired tenderness, about 10 minutes. **If there is too much water in the bottom of skillet, turn heat up to high and cook till liquid is evaporated. It might cause slight charring of vegetables, which adds to the flavor. Serve with warm tortillas and your favorite toppings.
